Always a standout on our cupping table, this coffee comes from Thailand's Mae Chedi cooperative via our friends at Beanspire Coffees. This lot underwent a special anaerobic fermentation process for nine days at Mae Chedi to enhance the coffee’s body, sweetness, and intense fruit flavors.

About the Producer

Coffee farming in Thailand is a relatively new industry, attracting the attention of young farmers and entrepreneurs. The country's coffee history began in the 1970s, when an opium eradication project introduced the first coffee trees. Traditionally, the Mae Chedi district has been known for its tea plantations, with tea remaining the primary cash crop in the area. However, as demand for specialty coffee from Thailand grows, the younger generation of farmers are increasingly investing in coffee production.
